Edlong, a U.S.-based company specializing in dairy flavors, revealed in July 2020 that it utilized an AI-based sensory intelligence platform to support expansion of its dairy-based natural flavors. Specifically, it predicted consumer preferences for cheese sauces using its flavors versus commercially available cheese products, with Edlong asserting that the predictions for its recipes were superior. It appears the company is using the platform for other use cases as well, such as development of its dairy-free flavors for almond milk. Although not mentioned publicly, it is safe to assume that Edlong employed the Gastrograph AI platform from Analytical Flavor Systems given the nature of the described methods and results.
