Canadian company EnWave Corporation (Lux Take: Strong Positive) develops Radiant Energy Vacuum (REV) technology, which involves the use of microwave energy in a vacuum to achieve fast dehydration at low temperatures with minimal oxidation of food products and biologicals. This allows higher retention of nutrients and product flavor compared to incumbent methods like freeze-drying and air-drying. In 2019, the company signed two noteworthy licensing deals: one with Dutch dairy company FrieslandCampina to use its REV technology for dairy ingredients and products like cheese- and yogurt-based snacks and the other with Canadian company Aurora Cannabis for cannabis products.
